Overnight Currant Buns

Ingredients

  • 4 cups flour
  • 1/2 cup sugar
  • pinch of salt
  • 1 egg
  • 1 cup milk
  • 1/2 cake compressed yeast
  • 1/2 cup melted butter
  • 1 handful currants
  • sugar and water for topping

Method

  1. 1 Sift together flour, sugar, and salt. Make a well in the center.
  2. 2 Add egg, milk, yeast, and melted butter to the well. Mix until combined.
  3. 3 Cover and let rise overnight.
  4. 4 The next morning, stir in currants. Let rise until 10:30 AM.
  5. 5 Roll out the dough and cut into rounds with a biscuit cutter.
  6. 6 Let buns rise again until 11:45 AM.
  7. 7 Bake for 10 minutes, then rub tops with a mixture of sugar and water.
