Overnight Currant Buns
Ingredients
- 4 cups flour
- 1/2 cup sugar
- pinch of salt
- 1 egg
- 1 cup milk
- 1/2 cake compressed yeast
- 1/2 cup melted butter
- 1 handful currants
- sugar and water for topping
Method
- 1 Sift together flour, sugar, and salt. Make a well in the center.
- 2 Add egg, milk, yeast, and melted butter to the well. Mix until combined.
- 3 Cover and let rise overnight.
- 4 The next morning, stir in currants. Let rise until 10:30 AM.
- 5 Roll out the dough and cut into rounds with a biscuit cutter.
- 6 Let buns rise again until 11:45 AM.
- 7 Bake for 10 minutes, then rub tops with a mixture of sugar and water.
