Overnight Buttermilk Bread
Ingredients
- 2 cups buttermilk
- 4 tablespoons sugar
- 1 tablespoon salt
- 4 tablespoons shortening
- 1 cake yeast
- 1/2 cup water
- 8 cups flour
Method
- 1 Scald buttermilk, cool to 70°F, and sieve to break up curds.
- 2 Mix buttermilk with sugar, salt, shortening, and yeast dissolved in water.
- 3 Beat mixture, then add flour and knead into a smooth dough.
- 4 Grease bowl, coat dough, cover, and let rise overnight.
- 5 Punch down dough, rest for one hour, then divide into loaves.
- 6 Place loaves in greased pans, rise for one hour, and bake at 350°F for 40 minutes.
