Oven-Baked White Cornmeal Cakes
Ingredients
- 1 cup white cornmeal
- 1 teaspoon salt
- Boiling water (as needed)
- Cold milk (as needed)
- Butter or oil (for greasing pan)
Method
- 1 Mix salt with cornmeal in a bowl.
- 2 Scald the mixture with just enough boiling water to dampen it.
- 3 Add cold milk gradually until the dough is moldable.
- 4 Form into oblong cakes, 3/4 inch thick, using about 1 tablespoon per cake.
- 5 Bake on a greased pan in a 425°F oven for 25 minutes.
