Oven-Baked White Cornmeal Cakes

Ingredients

  • 1 cup white cornmeal
  • 1 teaspoon salt
  • Boiling water (as needed)
  • Cold milk (as needed)
  • Butter or oil (for greasing pan)

Method

  1. 1 Mix salt with cornmeal in a bowl.
  2. 2 Scald the mixture with just enough boiling water to dampen it.
  3. 3 Add cold milk gradually until the dough is moldable.
  4. 4 Form into oblong cakes, 3/4 inch thick, using about 1 tablespoon per cake.
  5. 5 Bake on a greased pan in a 425°F oven for 25 minutes.
