Orange Tapioca Pudding With Meringue
Ingredients
- 1 cup tapioca
- 2 cups cold water
- 1 pinch salt
- 6 cups milk
- 1 orange (rind and juice)
- 3 egg yolks
- 1 cup sugar
- 3 egg whites
- 3 tablespoons sugar
- 1 teaspoon grated orange peel
- Butter for dish
Method
- 1 Soak tapioca overnight in 2 cups cold water.
- 2 Cook tapioca in a double boiler with salt, 6 cups milk, and orange rind until soft.
- 3 Remove from heat. Stir in egg yolks beaten with orange juice and 1 cup sugar.
- 4 Pour into a buttered baking dish. Top with meringue made from egg whites and 3 tablespoons sugar mixed with orange peel.
- 5 Bake in a very slow oven (300°F) for 30 minutes. Serve cold.
