Orange Raisin And Almond Bread
Ingredients
- 2 oranges (for rind)
- 1 cup orange juice, warmed to 80°F
- 2 tbsp melted shortening
- 4 tbsp sugar
- 1.5 tsp salt
- 1 egg
- 1 yeast cake
- 1 cup water, warmed to 80°F
- 8 cups flour (approx)
- 0.5 cup seeded raisins
- 0.5 cup chopped almonds
Method
- 1 Grate orange rind into a bowl. Add orange juice, shortening, sugar, salt, and egg. Beat to mix.
- 2 Dissolve yeast in warm water and add to the mixture. Work in flour to form a smooth, elastic dough.
- 3 Place dough in a greased bowl, coat with grease, cover, and let rise for 3 hours.
- 4 Punch down dough, turn over, and let rise again for 1 hour. Punch down once more and rise for 45 minutes.
- 5 Divide dough into three loaves. Fold raisins into one, almonds into the second, and leave the third plain.
- 6 Place loaves in greased pans and let rise for 45 minutes. Bake at 400°F for 40 minutes.
- 7 Cool on a wire rack.
