Orange Pistachio And Cherry Mousse
Ingredients
- 3/4 cup sugar
- Grated rind of 1 orange
- 1/4 cup cold water
- 1 teaspoon gelatin
- 2 tablespoons cold water
- 2/3 cup orange juice
- 2 tablespoons lemon juice
- 1 1/2 cups heavy cream, beaten stiff
- 1/4 cup pistachio nuts, shredded
- 1/4 cup candied cherries, cut into pieces
Method
- 1 Combine sugar, orange rind, and 1/4 cup water in a saucepan. Stir and boil for 1 minute to create a syrup.
- 2 Soak gelatin in 2 tablespoons cold water, then dissolve it into the hot syrup.
- 3 Stir in orange juice and lemon juice. Place the mixture on ice and stir until it begins to thicken.
- 4 Fold in the stiffly beaten cream, shredded pistachio nuts, and chopped candied cherries.
- 5 Pour the mixture into a ring mold or baking powder boxes. Cover with greased paper and tin lids.
- 6 Surround the molds with a mixture of two parts ice and one part salt. Freeze for 3 hours, then unmold and serve.
