Orange Marmalade Meringue Pie
Ingredients
- Plain pastry for one pie crust
- 1 cup milk
- ½ cup water
- Juice of 3 oranges
- Grated rind of ½ orange
- 6 level tablespoons cornstarch
- ¾ cup sugar
- 1 whole egg
- 1 egg yolk
- ½ glass orange marmalade (approx. ¼ cup)
- 1 egg white
Method
- 1 Line a pie tin with plain pastry.
- 2 Dissolve cornstarch and sugar in water. Add milk, orange juice, and grated rind. Bring to a boil and cook for five minutes.
- 3 Partly cool the mixture. Beat in the whole egg and egg yolk until thoroughly blended.
- 4 Pour into the prepared pie tin and bake in a very slow oven (300°F) for thirty minutes.
- 5 Cool the pie. Beat the egg white until stiff, then fold in orange marmalade.
- 6 Spread the meringue topping over the cooled pie.
