Orange Marmalade Meringue Pie

Ingredients

  • Plain pastry for one pie crust
  • 1 cup milk
  • ½ cup water
  • Juice of 3 oranges
  • Grated rind of ½ orange
  • 6 level tablespoons cornstarch
  • ¾ cup sugar
  • 1 whole egg
  • 1 egg yolk
  • ½ glass orange marmalade (approx. ¼ cup)
  • 1 egg white

Method

  1. 1 Line a pie tin with plain pastry.
  2. 2 Dissolve cornstarch and sugar in water. Add milk, orange juice, and grated rind. Bring to a boil and cook for five minutes.
  3. 3 Partly cool the mixture. Beat in the whole egg and egg yolk until thoroughly blended.
  4. 4 Pour into the prepared pie tin and bake in a very slow oven (300°F) for thirty minutes.
  5. 5 Cool the pie. Beat the egg white until stiff, then fold in orange marmalade.
  6. 6 Spread the meringue topping over the cooled pie.
