Orange Layer Cake With Meringue Frosting

Ingredients

  • 4 egg yolks
  • 1 cup granulated sugar
  • 2 egg whites
  • 1/2 cup milk
  • 1 1/2 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 2 egg whites
  • 1 cup powdered sugar
  • 1 orange, zested and juiced
  • 1/2 cup powdered sugar

Method

  1. 1 Preheat oven to 425°F. Grease and flour two 8-inch round cake pans.
  2. 2 Beat egg yolks and granulated sugar until creamy. Beat egg whites to stiff peaks.
  3. 3 Alternately add milk and the mixture of flour and baking powder to the yolk mixture, beating well after each addition.
  4. 4 Fold in the beaten egg whites. Divide batter evenly between prepared pans.
  5. 5 Bake for 7-10 minutes until a toothpick inserted in the center comes out clean. Cool slightly.
  6. 6 For filling, beat 2 egg whites to stiff peaks. Add 1 cup powdered sugar all at once and beat hard. Stir in orange zest and juice.
  7. 7 Spread filling between cake layers and on top. Mix remaining 1/2 cup powdered sugar with a little orange juice to create a thin frosting for the sides.
