Orange Layer Cake With Meringue Frosting
Ingredients
- 4 egg yolks
- 1 cup granulated sugar
- 2 egg whites
- 1/2 cup milk
- 1 1/2 cups sifted all-purpose flour
- 1 1/2 teaspoons baking powder
- 2 egg whites
- 1 cup powdered sugar
- 1 orange, zested and juiced
- 1/2 cup powdered sugar
Method
- 1 Preheat oven to 425°F. Grease and flour two 8-inch round cake pans.
- 2 Beat egg yolks and granulated sugar until creamy. Beat egg whites to stiff peaks.
- 3 Alternately add milk and the mixture of flour and baking powder to the yolk mixture, beating well after each addition.
- 4 Fold in the beaten egg whites. Divide batter evenly between prepared pans.
- 5 Bake for 7-10 minutes until a toothpick inserted in the center comes out clean. Cool slightly.
- 6 For filling, beat 2 egg whites to stiff peaks. Add 1 cup powdered sugar all at once and beat hard. Stir in orange zest and juice.
- 7 Spread filling between cake layers and on top. Mix remaining 1/2 cup powdered sugar with a little orange juice to create a thin frosting for the sides.
