Orange Layer Cake With Curd And Meringue
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup milk
- 2 teaspoons baking powder
- 1 tablespoon butter
- 1 tablespoon orange juice
- 1 orange (zest and juice)
- 2 large eggs
- 1 orange (zest and juice)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons granulated sugar
- 1 teaspoon butter
- 1 large egg
- 2 large egg whites
- 3/4 cup powdered sugar
Method
- 1 Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.
- 2 Beat 2 eggs and 1 cup sugar until light. Mix in melted butter, orange juice, and orange zest.
- 3 Combine flour and baking powder; stir into wet ingredients along with milk. Divide batter between pans.
- 4 Bake for 30 minutes or until a toothpick comes out clean. Cool completely in pans.
- 5 For filling: Mix orange juice, lemon juice, and orange zest in a cup. Fill with cold water to measure 1/2 cup total.
- 6 Boil liquid mixture, then whisk in cornstarch dissolved in a little cold water. Cook until thickened.
- 7 Whisk egg yolk and 2 tbsp sugar; temper with hot mixture, then return to pan. Add 1 tsp butter. Cool completely.
- 8 Spread filling between cake layers. Beat egg whites until stiff, then fold in powdered sugar to make icing.
