  • 2 large eggs
  • 1 orange (zest and juice)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons granulated sugar
  • 1 teaspoon butter
  • 1 large egg
  • 2 large egg whites
  • 3/4 cup powdered sugar

Method

  1. 1 Preheat oven to 350°F. Grease and flour two 8-inch round cake pans.
  2. 2 Beat 2 eggs and 1 cup sugar until light. Mix in melted butter, orange juice, and orange zest.
  3. 3 Combine flour and baking powder; stir into wet ingredients along with milk. Divide batter between pans.
  4. 4 Bake for 30 minutes or until a toothpick comes out clean. Cool completely in pans.
  5. 5 For filling: Mix orange juice, lemon juice, and orange zest in a cup. Fill with cold water to measure 1/2 cup total.
  6. 6 Boil liquid mixture, then whisk in cornstarch dissolved in a little cold water. Cook until thickened.
  7. 7 Whisk egg yolk and 2 tbsp sugar; temper with hot mixture, then return to pan. Add 1 tsp butter. Cool completely.
