Orange Custard With Cream
Ingredients
- juice of 10 oranges
- pounded loaf sugar (to taste)
- 12 egg yolks
- 1 pint heavy cream
Method
- 1 Strain the juice of 10 oranges and sweeten with pounded loaf sugar to taste.
- 2 Stir the sweetened juice over heat until hot, then remove and skim off any scum.
- 3 When the mixture is nearly cold, whisk in the beaten yolks of 12 eggs and 1 pint of cream.
- 4 Return the mixture to a saucepan and stir constantly over a slow fire until it thickens.
- 5 Serve the custard in cups.
