Orange Custard With Cream

Ingredients

  • juice of 10 oranges
  • pounded loaf sugar (to taste)
  • 12 egg yolks
  • 1 pint heavy cream

Method

  1. 1 Strain the juice of 10 oranges and sweeten with pounded loaf sugar to taste.
  2. 2 Stir the sweetened juice over heat until hot, then remove and skim off any scum.
  3. 3 When the mixture is nearly cold, whisk in the beaten yolks of 12 eggs and 1 pint of cream.
  4. 4 Return the mixture to a saucepan and stir constantly over a slow fire until it thickens.
  5. 5 Serve the custard in cups.
