Orange Custard Soufflé

Ingredients

  • 1 cup orange juice (from 3 oranges)
  • 1/2 cup water
  • 1/2 cup sugar
  • 5 tablespoons cornstarch
  • 2 egg yolks
  • 1 orange, cut into tiny pieces
  • 2 egg whites

Method

  1. 1 Dissolve cornstarch and sugar in water in a saucepan. Stir in orange juice and bring to a boil.
  2. 2 Cook for 5 minutes, stirring constantly, then remove from heat and let cool completely.
  3. 3 Stir egg yolks and diced orange pieces into the cooled mixture until well combined.
  4. 4 Beat egg whites until stiff peaks form. Gently fold them into the orange mixture.
  5. 5 Pour into a buttered soufflé dish placed in a water bath. Bake at 350°F until set.
  6. 6 Serve warm with orange syrup on the side.
