Orange Custard Ice Cream

Ingredients

  • 3 cups milk
  • 6 tablespoons cornstarch
  • 1 cup strained orange juice
  • 2 egg yolks
  • 1 cup sugar
  • 1 teaspoon orange extract
  • 1 teaspoon vanilla extract
  • 2 egg whites

Method

  1. 1 In a saucepan, stir cornstarch into milk until dissolved.
  2. 2 Bring to a boil, then cook slowly for 5 minutes.
  3. 3 Remove from heat and let the mixture cool completely.
  4. 4 Whisk in orange juice, egg yolks, sugar, and extracts until thoroughly mixed.
  5. 5 Pour into an ice cream freezer and begin freezing.
  6. 6 Just before removing the dasher, fold in stiffly beaten egg whites.
  7. 7 Churn a few more turns to mix, then pack the can in salt and ice for 1.5 hours.
