Orange Custard Ice Cream
Ingredients
- 3 cups milk
- 6 tablespoons cornstarch
- 1 cup strained orange juice
- 2 egg yolks
- 1 cup sugar
- 1 teaspoon orange extract
- 1 teaspoon vanilla extract
- 2 egg whites
Method
- 1 In a saucepan, stir cornstarch into milk until dissolved.
- 2 Bring to a boil, then cook slowly for 5 minutes.
- 3 Remove from heat and let the mixture cool completely.
- 4 Whisk in orange juice, egg yolks, sugar, and extracts until thoroughly mixed.
- 5 Pour into an ice cream freezer and begin freezing.
- 6 Just before removing the dasher, fold in stiffly beaten egg whites.
- 7 Churn a few more turns to mix, then pack the can in salt and ice for 1.5 hours.
