Orange Cream Pie With Meringue
Ingredients
- 1 orange (juice and grated rind)
- 2/3 cup milk
- 3 eggs
- 1 cup granulated sugar
- 1 tablespoon flour
- 1/8 teaspoon salt
- 3 tablespoons sugar (for meringue)
Method
- 1 Beat egg yolks and 1 cup sugar together. Stir in flour, milk, orange juice, and grated rind.
- 2 Cook mixture in a double boiler, stirring until thickened. Pour into an unbaked pie crust.
- 3 Bake at 350°F for 30 minutes.
- 4 Top with meringue made from egg whites and 3 tablespoons sugar. Brown briefly in oven.
