Orange Cream Pie With Meringue

Ingredients

  • 1 orange (juice and grated rind)
  • 2/3 cup milk
  • 3 eggs
  • 1 cup granulated sugar
  • 1 tablespoon flour
  • 1/8 teaspoon salt
  • 3 tablespoons sugar (for meringue)

Method

  1. 1 Beat egg yolks and 1 cup sugar together. Stir in flour, milk, orange juice, and grated rind.
  2. 2 Cook mixture in a double boiler, stirring until thickened. Pour into an unbaked pie crust.
  3. 3 Bake at 350°F for 30 minutes.
  4. 4 Top with meringue made from egg whites and 3 tablespoons sugar. Brown briefly in oven.
