Orange Cream Layer Cake

Ingredients

  • 1/3 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 cup milk
  • 1 3/4 cups flour
  • 1/4 teaspoon salt
  • 4 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 cup sweetened whipped cream
  • 1 tablespoon cream
  • 1 cup confectioners' sugar
  • Pulp and grated rind of 1 orange
  • 1/2 teaspoon orange extract
  • 1 tablespoon melted butter

Method

  1. 1 Cream shortening and add sugar gradually, beating well.
  2. 2 Add beaten egg, half the milk, and mix well.
  3. 3 Add half the flour (sifted with salt and baking powder), then the remainder of the milk.
  4. 4 Add the remainder of the flour and vanilla; beat after each addition.
  5. 5 Bake in two greased layer cake tins in a 350°F oven for 15 to 20 minutes.
  6. 6 Spread whipped cream thickly between the cooled layers.
  7. 7 Beat cream, confectioners' sugar, orange pulp, rind, extract, and melted butter until smooth.
  8. 8 Spread orange frosting on top of the cake.
