Orange Cream Filling
Ingredients
- 2 tablespoons butter
- 4 tablespoons cornstarch
- 1 orange (grated rind)
- 1 cup orange juice
- 1 cup sugar
- ½ teaspoon salt
- 1 ½ tablespoons lemon juice
- 1 cup heavy cream, beaten stiff
Method
- 1 Melt butter in a saucepan. Whisk in cornstarch until smooth.
- 2 Stir in orange rind, orange juice, and sugar. Cook over medium heat, stirring constantly, until thickened.
- 3 Transfer to a double boiler or continue cooking over low heat for 15 minutes, stirring constantly.
- 4 Remove from heat. Stir in salt and lemon juice. Let cool completely.
- 5 Fold in stiffly beaten heavy cream. Use immediately or chill.
