Orange Cream Filling

Ingredients

  • 2 tablespoons butter
  • 4 tablespoons cornstarch
  • 1 orange (grated rind)
  • 1 cup orange juice
  • 1 cup sugar
  • ½ teaspoon salt
  • 1 ½ tablespoons lemon juice
  • 1 cup heavy cream, beaten stiff

Method

  1. 1 Melt butter in a saucepan. Whisk in cornstarch until smooth.
  2. 2 Stir in orange rind, orange juice, and sugar. Cook over medium heat, stirring constantly, until thickened.
  3. 3 Transfer to a double boiler or continue cooking over low heat for 15 minutes, stirring constantly.
  4. 4 Remove from heat. Stir in salt and lemon juice. Let cool completely.
  5. 5 Fold in stiffly beaten heavy cream. Use immediately or chill.
