Orange Cranberry Walnut Bread

Ingredients

  • 2 cups flour
  • 2/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 3/4 cup grated orange peel
  • 4 tablespoons orange juice
  • 1/4 cup butter, melted
  • 1 egg
  • 1/3 cup chopped cranberries
  • 1/3 cup chopped walnuts
  • 1/3 cup powdered sugar, optional
  • 1 teaspoon water, optional

Method

  1. 1 Preheat oven to 350°F. Mix flour, sugar, baking powder, and baking soda in a large bowl.
  2. 2 Grate orange peel and squeeze juice. Add additional juice to make 3/4 cup total.
  3. 3 In a separate bowl, blend orange juice, butter, egg, and grated orange peel. Add to flour mixture and stir until just blended.
  4. 4 Mix in cranberries and walnuts. Pour batter into a greased 9-by-5-inch loaf pan.
  5. 5 Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  6. 6 Cool in pan for 10 minutes, then remove and cool completely on a wire rack.
  7. 7 Optional: Mix powdered sugar and water to make a thin glaze. Drizzle over the cooled loaf.
