Orange Cranberry Walnut Bread
Ingredients
- 2 cups flour
- 2/3 cup sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 3/4 cup grated orange peel
- 4 tablespoons orange juice
- 1/4 cup butter, melted
- 1 egg
- 1/3 cup chopped cranberries
- 1/3 cup chopped walnuts
- 1/3 cup powdered sugar, optional
- 1 teaspoon water, optional
Method
- 1 Preheat oven to 350°F. Mix flour, sugar, baking powder, and baking soda in a large bowl.
- 2 Grate orange peel and squeeze juice. Add additional juice to make 3/4 cup total.
- 3 In a separate bowl, blend orange juice, butter, egg, and grated orange peel. Add to flour mixture and stir until just blended.
- 4 Mix in cranberries and walnuts. Pour batter into a greased 9-by-5-inch loaf pan.
- 5 Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- 6 Cool in pan for 10 minutes, then remove and cool completely on a wire rack.
- 7 Optional: Mix powdered sugar and water to make a thin glaze. Drizzle over the cooled loaf.
