Orange Chocolate Layer Cake With Orange Icing

Ingredients

  • 1/2 cup shortening
  • 2 1/3 cups flour
  • 1 1/2 cups sugar
  • 1/4 teaspoon salt
  • grated rind of 1/2 orange
  • 4 teaspoons baking powder
  • 1 whole egg
  • 1 egg yolk
  • 1 cup milk
  • 1 1/2 oz unsweetened chocolate, melted
  • 3 tablespoons melted butter
  • 3 cups confectioner's sugar
  • 3 oz unsweetened chocolate
  • 2 tablespoons orange juice
  • 1 egg white
  • grated rind of 1/2 orange
  • pulp of 1 orange
  • 1/2 oz unsweetened chocolate, shaved

Method

  1. 1 Cream shortening, sugar, and orange rind.
  2. 2 Add beaten egg yolks.
  3. 3 Sift flour, salt, and baking powder; add alternately with milk.
  4. 4 Fold in one beaten egg white.
  5. 5 Divide batter in two; add melted chocolate to one part.
  6. 6 Spoon alternating dark and light batter into three greased layer pans.
  7. 7 Bake in a 350°F oven for 20 minutes.
  8. 8 Beat butter, sugar, orange juice, rind, and pulp until smooth.
  9. 9 Fold in beaten egg white and spread on top layer.
  10. 10 Sprinkle with shaved chocolate while icing is soft.
  11. 11 Melt remaining chocolate and mix with remaining icing.
  12. 12 Spread thickly between layers and on sides of cake.
