Orange Chocolate Layer Cake With Orange Icing
Ingredients
- 1/2 cup shortening
- 2 1/3 cups flour
- 1 1/2 cups sugar
- 1/4 teaspoon salt
- grated rind of 1/2 orange
- 4 teaspoons baking powder
- 1 whole egg
- 1 egg yolk
- 1 cup milk
- 1 1/2 oz unsweetened chocolate, melted
- 3 tablespoons melted butter
- 3 cups confectioner's sugar
- 3 oz unsweetened chocolate
- 2 tablespoons orange juice
- 1 egg white
- grated rind of 1/2 orange
- pulp of 1 orange
- 1/2 oz unsweetened chocolate, shaved
Method
- 1 Cream shortening, sugar, and orange rind.
- 2 Add beaten egg yolks.
- 3 Sift flour, salt, and baking powder; add alternately with milk.
- 4 Fold in one beaten egg white.
- 5 Divide batter in two; add melted chocolate to one part.
- 6 Spoon alternating dark and light batter into three greased layer pans.
- 7 Bake in a 350°F oven for 20 minutes.
- 8 Beat butter, sugar, orange juice, rind, and pulp until smooth.
- 9 Fold in beaten egg white and spread on top layer.
- 10 Sprinkle with shaved chocolate while icing is soft.
- 11 Melt remaining chocolate and mix with remaining icing.
- 12 Spread thickly between layers and on sides of cake.
