Orange Buttermilk Cakes

Ingredients

  • 6 oz wholemeal flour
  • 3 oz butter
  • 4 oz sugar
  • Rind of 1 small orange
  • 1 egg
  • Juice of 1 orange
  • Buttermilk

Method

  1. 1 Grate in the rind of 1 small orange and mix with flour, butter, and sugar.
  2. 2 Beat 1 egg and stir in with the juice of the orange and sufficient buttermilk to make a smooth, thick batter.
  3. 3 Half fill small greased tins with the mixture and bake for 15 minutes in a moderate oven (350°F).
