Orange Blossom Souffle Omelet
Ingredients
- 6 eggs
- 3 oz powdered sugar
- 1 oz butter
- 2 tsp potato flour
- 2 tsp orange flower water
- castor sugar for serving
Method
- 1 In a large bowl, beat egg yolks with powdered sugar, potato flour, and orange flower water for 10 minutes.
- 2 Beat egg whites to stiff peaks, then gently fold them into the yolk mixture.
- 3 Melt butter in an omelet pan over gentle heat. Pour in the mixture and cook until edges set.
- 4 Transfer the pan to a 350°F oven and bake for 10 minutes.
- 5 Slide onto a buttered dish, sift with sugar, and serve immediately.
