  • 6 eggs
  • 3 oz powdered sugar
  • 1 oz butter
  • 2 tsp potato flour
  • 2 tsp orange flower water
  • castor sugar for serving

Method

  1. 1 In a large bowl, beat egg yolks with powdered sugar, potato flour, and orange flower water for 10 minutes.
  2. 2 Beat egg whites to stiff peaks, then gently fold them into the yolk mixture.
  3. 3 Melt butter in an omelet pan over gentle heat. Pour in the mixture and cook until edges set.
  4. 4 Transfer the pan to a 350°F oven and bake for 10 minutes.
  5. 5 Slide onto a buttered dish, sift with sugar, and serve immediately.
