Orange Apple Sauce Marmalade
Ingredients
- 12 oranges
- 5 pints cold water
- 4 lemons
- 5 cups apple sauce
- Sugar (3/4 cup per cup of fruit mixture)
Method
- 1 Cut oranges in half, slice thinly, and remove seeds. Place in a preserving kettle with 5 pints of cold water. Let stand for 12 hours.
- 2 Bring to a boil and cook until fruit is tender. Add juice of 4 lemons and 5 cups apple sauce. Bring to a boil again and measure the total volume.
- 3 Add 3/4 cup sugar for every cup of the fruit mixture. Return to the kettle and bring to a boil.
- 4 Cook until the mixture forms a thick jam or reaches 223°F on a candy thermometer.
