Orange Almond Potato Cake
Ingredients
- 5 ounces sweet almonds
- 5 ounces granulated sugar
- 1.5 ounces potato meal
- 3 eggs
- 1 large orange or 2 small oranges
- Butter for greasing
- Powdered sugar for glaze
- Lemon juice for glaze
Method
- 1 Preheat oven to 300°F. Grease a paper mold with butter.
- 2 Mix egg yolks with sugar until combined.
- 3 Stir in potato meal, finely chopped skinned almonds, orange juice, and orange peel.
- 4 Fold in well-beaten egg whites.
- 5 Pour batter into mold (about 1 inch thick) and bake at 300°F.
- 6 Cool and cover with a glaze made from powdered sugar, lemon juice, and egg white.
