Orange Almond Fruit Cake Bars
Ingredients
- 2 oz all-purpose flour
- Approx. 1.5 oz potato starch
- 4 oz granulated sugar
- 1.5 oz sweet almonds, skinned and halved
- 1 oz candied orange peel or angelica, diced
- 1 oz fruit preserve, diced
- 3 large eggs, separated
Method
- 1 Preheat oven to 350°F. Skin almonds by blanching, then halve them lengthwise.
- 2 Dice candied fruit and preserve into small cubes. Set aside.
- 3 Beat egg yolks and sugar for about 30 minutes until pale and thick. Sift in flour and mix gently.
- 4 Fold in beaten egg whites, then gently mix in almonds and fruit cubes.
- 5 Pour batter into a greased and floured rectangular pan (approx. 4 inches wide). Bake until set.
- 6 Remove from oven, slice into bars slightly more than ½ inch thick. Let cool completely before serving.
