Onion Tomato Soup With Toast And Cheese
Ingredients
- 4 onions
- 4 tomatoes, skinned and sliced
- 1 oz grated cheese
- 1/4 lb stale wholemeal bread, cut into dice
- 1 quart water
- 1 oz butter
- 1 tsp dried herbs
- Salt and pepper to taste
Method
- 1 Melt butter in a pot. Slice onions and fry until brown.
- 2 Add tomatoes, water, herbs, salt, and pepper. Boil gently for 1 hour.
- 3 Place bread dice in a tureen. Pour hot soup over bread and cover for 10 minutes.
- 4 Sprinkle with grated cheese and serve.
