Onion Infused Butter Bearnaise

Ingredients

  • 2 tbsp vinegar
  • 2 tbsp water
  • 1 slice onion
  • 3 egg yolks
  • salt and pepper
  • 4 tbsp butter

Method

  1. 1 Bring vinegar, water, and onion slice to a boil. Simmer for 10 minutes.
  2. 2 Remove the onion slice from the liquid.
  3. 3 Remove from heat and whisk in beaten egg yolks until light.
  4. 4 Season with salt and pepper, then whisk in butter in small bits until creamy.
