Onion Infused Butter Bearnaise
Ingredients
- 2 tbsp vinegar
- 2 tbsp water
- 1 slice onion
- 3 egg yolks
- salt and pepper
- 4 tbsp butter
Method
- 1 Bring vinegar, water, and onion slice to a boil. Simmer for 10 minutes.
- 2 Remove the onion slice from the liquid.
- 3 Remove from heat and whisk in beaten egg yolks until light.
- 4 Season with salt and pepper, then whisk in butter in small bits until creamy.
