Onion And Parsley Croquettes With Cornmeal
Ingredients
- 1½ cups cold mashed potatoes
- 1 tablespoon butter
- 1 teaspoon minced parsley
- 2 tablespoons cream
- corn meal
- ¼ teaspoon salt
- ½ teaspoon minced onion
- dash of pepper
- 1 egg
Method
- 1 Mix mashed potatoes and butter into a paste. Stir in parsley, salt, pepper, cream, onion, and egg.
- 2 Mold the mixture into croquette shapes. Dip into beaten egg white and roll in corn meal.
- 3 Fry in deep fat until golden brown.
