Onion And Parsley Croquettes With Cornmeal

Ingredients

  • 1½ cups cold mashed potatoes
  • 1 tablespoon butter
  • 1 teaspoon minced parsley
  • 2 tablespoons cream
  • corn meal
  • ¼ teaspoon salt
  • ½ teaspoon minced onion
  • dash of pepper
  • 1 egg

Method

  1. 1 Mix mashed potatoes and butter into a paste. Stir in parsley, salt, pepper, cream, onion, and egg.
  2. 2 Mold the mixture into croquette shapes. Dip into beaten egg white and roll in corn meal.
  3. 3 Fry in deep fat until golden brown.
