Ingredients

  • 2 medium Spanish onions
  • 1 oz butter
  • 3 eggs
  • salt and pepper
  • 6 oz fine wheatmeal
  • 2.5 oz butter
  • cold water

Method

  1. 1 Chop onions finely, boil briefly in water, then drain.
  2. 2 Stew onions in 1 oz butter for 10 minutes; season with salt and pepper.
  3. 3 Beat eggs and mix with onions over heat until just beginning to set; remove from heat.
  4. 4 Make pastry by mixing wheatmeal, 2.5 oz butter, and cold water; roll out.
  5. 5 Place onion-egg mixture on pastry, fold over, pinch edges, and bake until brown.
