Onion And Egg Pastry Turnover
Ingredients
- 2 medium Spanish onions
- 1 oz butter
- 3 eggs
- salt and pepper
- 6 oz fine wheatmeal
- 2.5 oz butter
- cold water
Method
- 1 Chop onions finely, boil briefly in water, then drain.
- 2 Stew onions in 1 oz butter for 10 minutes; season with salt and pepper.
- 3 Beat eggs and mix with onions over heat until just beginning to set; remove from heat.
- 4 Make pastry by mixing wheatmeal, 2.5 oz butter, and cold water; roll out.
- 5 Place onion-egg mixture on pastry, fold over, pinch edges, and bake until brown.
