Onion And Cream Tart
Ingredients
- 1 lb Spanish onions
- 1 lb English onions
- 4 oz butter, divided
- 3 eggs
- 1/2 pint heavy cream
- Salt and pepper to taste
- 1/2 lb Allinson fine wheatmeal
Method
- 1 Slice onions and stew with 1.5 oz butter until tender but not browned. Let cool.
- 2 Mix cooled onions with beaten eggs, cream, and seasoning.
- 3 Make a paste with wheatmeal and remaining butter. Line a baking tin with most of the paste.
- 4 Pour onion mixture into the lined tin. Cut remaining paste into strips and lay crosswise over the top.
- 5 Bake in a moderate oven (350°F) until golden brown.
