Onion And Cream Tart

Ingredients

  • 1 lb Spanish onions
  • 1 lb English onions
  • 4 oz butter, divided
  • 3 eggs
  • 1/2 pint heavy cream
  • Salt and pepper to taste
  • 1/2 lb Allinson fine wheatmeal

Method

  1. 1 Slice onions and stew with 1.5 oz butter until tender but not browned. Let cool.
  2. 2 Mix cooled onions with beaten eggs, cream, and seasoning.
  3. 3 Make a paste with wheatmeal and remaining butter. Line a baking tin with most of the paste.
  4. 4 Pour onion mixture into the lined tin. Cut remaining paste into strips and lay crosswise over the top.
  5. 5 Bake in a moderate oven (350°F) until golden brown.
