One Pot Vegetable Rice Skillet
Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 1/2 tsp ground ginger
- 1/2 tsp turmeric
- 2 tsp cumin
- 1 cup mixed vegetables (cauliflower, peppers, carrots, or peas), chopped
- 1 large baking potato, diced
- 2 1/2 cups white rice, uncooked
- 1 can (15.5 oz) low-sodium kidney beans, drained and rinsed
- 1 cup water
- 1/2 tsp salt (optional)
Method
- 1 Heat oil in a large skillet over medium heat. Add onion, ginger, turmeric, and cumin; stir for 1 minute.
- 2 Add remaining ingredients including potatoes, rice, beans, and water. Bring to a boil.
- 3 Cover, reduce heat, and simmer for 20 to 25 minutes until liquid is absorbed and vegetables are tender.
- 4 Serve hot. Refrigerate leftovers within 2 to 3 hours.
