One Pot Vegetable Rice Skillet

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1/2 tsp ground ginger
  • 1/2 tsp turmeric
  • 2 tsp cumin
  • 1 cup mixed vegetables (cauliflower, peppers, carrots, or peas), chopped
  • 1 large baking potato, diced
  • 2 1/2 cups white rice, uncooked
  • 1 can (15.5 oz) low-sodium kidney beans, drained and rinsed
  • 1 cup water
  • 1/2 tsp salt (optional)

Method

  1. 1 Heat oil in a large skillet over medium heat. Add onion, ginger, turmeric, and cumin; stir for 1 minute.
  2. 2 Add remaining ingredients including potatoes, rice, beans, and water. Bring to a boil.
  3. 3 Cover, reduce heat, and simmer for 20 to 25 minutes until liquid is absorbed and vegetables are tender.
  4. 4 Serve hot. Refrigerate leftovers within 2 to 3 hours.
