One Pot Chicken Rice With Chili

Ingredients

  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1/3 cup celery, sliced
  • 1/2 cup uncooked rice
  • 1 teaspoon vegetable oil
  • 1 can (14.5 oz) tomatoes
  • 1 1/2 cups canned chicken
  • 3/4 cup water
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon pepper

Method

  1. 1 Cook onion, green pepper, celery, and rice in vegetable oil over medium heat in a large saucepan until soft, about 5 minutes.
  2. 2 Drain tomatoes, reserving the liquid. Chop the tomatoes into small pieces.
  3. 3 Add tomatoes, reserved liquid, chicken, water, chili powder, and pepper to the rice mixture.
  4. 4 Bring to a boil, then stir. Cover and cook on low heat until rice is tender, about 25 minutes.
