One Pot Chicken Rice With Chili
Ingredients
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 1/3 cup celery, sliced
- 1/2 cup uncooked rice
- 1 teaspoon vegetable oil
- 1 can (14.5 oz) tomatoes
- 1 1/2 cups canned chicken
- 3/4 cup water
- 1/2 teaspoon chili powder
- 1/4 teaspoon pepper
Method
- 1 Cook onion, green pepper, celery, and rice in vegetable oil over medium heat in a large saucepan until soft, about 5 minutes.
- 2 Drain tomatoes, reserving the liquid. Chop the tomatoes into small pieces.
- 3 Add tomatoes, reserved liquid, chicken, water, chili powder, and pepper to the rice mixture.
- 4 Bring to a boil, then stir. Cover and cook on low heat until rice is tender, about 25 minutes.
