One Pan Chicken And Potato Salsa Skillet
Ingredients
- 16 ounces potatoes, cut into 3/4-inch cubes
- 2 chicken breasts, boned, skinned, and cut into 3/4-inch cubes
- 2 tablespoons oil
- 1 cup salsa
- 1 can (15 ounces) whole kernel corn, drained
Method
- 1 Microwave potatoes for 8-10 minutes until tender, or cook on stove for 15 minutes until tender.
- 2 In a large skillet, brown chicken in oil on high heat for 5 minutes.
- 3 Add potatoes to the skillet and cook until lightly browned.
- 4 Stir in salsa and corn; cook until heated through.
