Olive Stuffed Cottage Cheese Balls
Ingredients
- 1 cup cottage cheese
- 2 tbsp chopped olives
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt to taste
- Paprika to taste
- Lettuce or endive for serving
- French or Mayonnaise dressing
- Extra olives for garnish
Method
- 1 In a bowl, mix cottage cheese with chopped olives.
- 2 Add oil and lemon juice, then season with salt and paprika. Mix until smooth.
- 3 Shape the mixture into small balls.
- 4 Serve the cheese balls on a bed of lettuce or endive.
- 5 Drizzle with French or Mayonnaise dressing and garnish with extra olives.
