Olive Oil Mayonnaise

Ingredients

  • 4 egg yolks
  • Best olive oil
  • Lemon juice to taste

Method

  1. 1 Make a small hole in an eggshell and place it over a bowl to hold the olive oil for easy dripping.
  2. 2 Beat the egg yolks in a bowl. Slowly drip in the olive oil, one drop at a time, stirring constantly in the same direction until the sauce thickens.
  3. 3 Just before serving, stir in lemon juice to taste.
