Olive Oil Mayonnaise
Ingredients
- 4 egg yolks
- Best olive oil
- Lemon juice to taste
Method
- 1 Make a small hole in an eggshell and place it over a bowl to hold the olive oil for easy dripping.
- 2 Beat the egg yolks in a bowl. Slowly drip in the olive oil, one drop at a time, stirring constantly in the same direction until the sauce thickens.
- 3 Just before serving, stir in lemon juice to taste.
