Okra And Tomato Rice Soup
Ingredients
- 2 quarts cold water
- Chicken or turkey bones and gristle
- 1 cup okra
- 1 tablespoon chopped pimento
- 1.5 teaspoons salt
- 0.5 cup rice
- 2 tablespoons fat
- 1.5 cups tomatoes
- 0.5 cup chopped parsley
Method
- 1 Soak bones and gristle in cold water for 1 hour.
- 2 Boil slowly for 1 hour in the same water, then strain out the bones and gristle.
- 3 Add okra, pimento, salt, rice, fat, tomatoes, and parsley to the broth.
- 4 Boil slowly for 30 minutes and serve.
