Okra And Lemon Greens
Ingredients
- 1 small onion, finely chopped
- 2 tablespoons corn oil
- 6 cups greens, shredded
- 1 pound okra
- 1 chili pepper, finely chopped and crushed
- 1/4 cup lemon juice
- 1/4 cup water
Method
- 1 In a large heavy pan, sauté the chopped onion in corn oil until golden brown.
- 2 Add the shredded greens, okra, crushed chili pepper, lemon juice, and 1/4 cup water.
- 3 Cover and simmer over low heat until the greens are tender.
- 4 Squeeze additional lemon juice over the dish before serving.
