Okra And Fish Stew
Ingredients
- 1/3 cup olive oil or butter
- 1 small sweet Chile pepper, chopped fine
- 1 cup okra
- 1 cup stewed fresh or canned tomatoes
- 1 cup cooked fresh fish (cod, haddock, etc.)
- 1/2 cup flaked salt fish (mackerel, etc.)
- Water crackers, for serving
Method
- 1 Chop the Chile pepper into fine bits and toss it in a saucepan with olive oil or butter over heat.
- 2 When hot, add the okra and stewed tomatoes. Cook for 15 minutes.
- 3 Stir in the cooked fresh fish and flaked salt fish. Cover and cook for 20 minutes longer.
- 4 Serve hot with water crackers.
