Oatmeal Raisin Muffins
Ingredients
- 1 egg
- 1/3 cup fat-free milk
- 1 1/4 cups oil
- 1 cup flour
- 1/3 cup oatmeal
- 1 teaspoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon raisins
- margarine or butter, for greasing muffin cups
Method
- 1 Preheat oven to 400°F. Grease muffin cups with margarine or butter.
- 2 In a small bowl, whisk together egg, milk, and oil.
- 3 In a large bowl, mix flour, oatmeal, sugar, baking powder, salt, and raisins.
- 4 Pour wet ingredients into dry ingredients. Stir until barely moistened; batter should be lumpy.
- 5 Spoon batter into prepared muffin cups, filling each half-full.
- 6 Bake for 20-25 minutes or until golden brown.
