- 1/2 lb fine oatmeal
- 4 eggs
- 1 pint milk
- Butter, oil, or vegetable butter for frying
- Lemon wedges
- Caster sugar
Method
- 1 Combine the oatmeal, eggs, and milk in a bowl to make a smooth batter.
- 2 Heat butter, oil, or vegetable butter in a skillet over medium heat.
- 3 Pour batter into the skillet to form pancakes and fry in the usual way until golden.
- 4 Serve immediately with lemon wedges and caster sugar.
