Oatmeal Nut Bread

Ingredients

  • 1 cake compressed yeast
  • 2 cups boiling water
  • 1/2 cup lukewarm water
  • 2 cups rolled oats
  • 1 teaspoon salt
  • 1/2 cup brown sugar or 2 tablespoons corn syrup
  • 2 tablespoons fat
  • 4 cups flour
  • 1/2 cup chopped nuts

Method

  1. 1 Pour boiling water over oats, cover, and let stand until lukewarm.
  2. 2 Dissolve yeast and sugar in lukewarm water, add fat, and mix into the oatmeal.
  3. 3 Add 1 cup flour to make a sponge, beat well, cover, and let rise for 1 hour.
  4. 4 Add remaining flour, nuts, and salt; knead well.
  5. 5 Place in a greased bowl, cover, and let rise until doubled in bulk (about 1.5 hours).
  6. 6 Mold into loaves, place in greased pans half full, and let rise for 1 hour.
  7. 7 Bake in a moderate oven (350°F) for 45 minutes.
