Oatmeal Nut Bread
Ingredients
- 1 cake compressed yeast
- 2 cups boiling water
- 1/2 cup lukewarm water
- 2 cups rolled oats
- 1 teaspoon salt
- 1/2 cup brown sugar or 2 tablespoons corn syrup
- 2 tablespoons fat
- 4 cups flour
- 1/2 cup chopped nuts
Method
- 1 Pour boiling water over oats, cover, and let stand until lukewarm.
- 2 Dissolve yeast and sugar in lukewarm water, add fat, and mix into the oatmeal.
- 3 Add 1 cup flour to make a sponge, beat well, cover, and let rise for 1 hour.
- 4 Add remaining flour, nuts, and salt; knead well.
- 5 Place in a greased bowl, cover, and let rise until doubled in bulk (about 1.5 hours).
- 6 Mold into loaves, place in greased pans half full, and let rise for 1 hour.
- 7 Bake in a moderate oven (350°F) for 45 minutes.
