Oatmeal Muffins
Ingredients
- 1 cup boiling water
- 1 cup steam-cooked oatmeal
- 1 cup flour
- 2 tsp baking powder
- ½ tsp salt
- Additional flour as needed
Method
- 1 Pour boiling water over the oatmeal and let stand overnight.
- 2 Sift together 1 cup flour, baking powder, and salt.
- 3 Mix dry ingredients with soaked oatmeal.
- 4 Add enough flour to make a batter that drops easily from the spoon.
- 5 Bake in buttered muffin pans.
