Nutmeg Syrup Cornmeal Batter Bread
Ingredients
- 1 cup cornmeal
- 1/2 tsp nutmeg
- 1 tsp salt
- 4 tbsp syrup
- 3 tbsp shortening
- 1 1/2 cups boiling water
- 3/4 cup flour
- 2 well-beaten eggs
- 4 tsp baking powder
- 1 1/4 cups milk
Method
- 1 Place cornmeal, nutmeg, salt, syrup, and shortening in a mixing bowl.
- 2 Pour boiling water over the mixture and beat to blend thoroughly.
- 3 Let the mixture cool slightly, then add flour, eggs, baking powder, and milk.
- 4 Beat to mix thoroughly, then pour into a well-greased baking dish.
- 5 Bake in a hot oven (425°F) for 30 minutes.
- 6 Serve directly from the dish.
