Nut Butter Pimiento Sandwich Fingers
Ingredients
- 1 cup nut butter
- 2 tbsp olive oil
- 1 tbsp chopped pimientos
- 2 slices brown bread
- Finely chopped cress or shredded lettuce
Method
- 1 Mix nut butter, olive oil, and chopped pimientos in a bowl until smooth.
- 2 Spread the mixture evenly onto one slice of unbuttered brown bread.
- 3 Top with finely chopped cress or shredded lettuce.
- 4 Place the second slice of buttered bread on top, press down, trim crusts, and cut into 1-inch wide fingers.
