New Potato Salad With Truffle And Whipped Cream
Ingredients
- New potatoes
- 3 teaspoons salad oil
- 1 teaspoon white vinegar
- 1 onion
- Chopped parsley
- Chopped tarragon
- Chopped chervil
- Chopped celery
- Whipped cream
- Salt
- Pepper
- Tarragon vinegar
- Watercress
- Thin slices of truffle cooked in white wine
- Slices of cooked cucumber
Method
- 1 Steam new potatoes until well cooked, then let them cool completely.
- 2 Slice the cooled potatoes and toss with salad oil and white vinegar.
- 3 Rub a salad bowl with onion, then layer potatoes with chopped herbs and celery.
- 4 Cover with whipped cream seasoned with salt, pepper, and tarragon vinegar.
- 5 Garnish with watercress, cooked truffle slices, and cooked cucumber.
