New Potato, Carrot, And Beetroot Salad
Ingredients
- equal parts new potatoes, cooked
- equal parts carrots, cooked
- equal parts beetroot, cooked
- 1 sour apple
- 6 anchovies
- 3 parts olive oil
- 1 part vinegar
- salt
- pepper
- mustard
- chopped parsley
- cress for garnish
Method
- 1 Cook new potatoes, carrots, and beetroot until tender. Slice them into rounds resembling a quarter-dollar.
- 2 Cut the sour apple into rounds of the same size. Cut the anchovies into small pieces.
- 3 Whisk together 3 parts olive oil, 1 part vinegar, salt, pepper, and mustard to make the dressing.
- 4 Combine the vegetables, apple, and anchovies. Pour the dressing over and toss gently.
- 5 Pile the salad onto a plate and surround with cress before serving.
