New Potato, Carrot, And Beetroot Salad

Ingredients

  • equal parts new potatoes, cooked
  • equal parts carrots, cooked
  • equal parts beetroot, cooked
  • 1 sour apple
  • 6 anchovies
  • 3 parts olive oil
  • 1 part vinegar
  • salt
  • pepper
  • mustard
  • chopped parsley
  • cress for garnish

Method

  1. 1 Cook new potatoes, carrots, and beetroot until tender. Slice them into rounds resembling a quarter-dollar.
  2. 2 Cut the sour apple into rounds of the same size. Cut the anchovies into small pieces.
  3. 3 Whisk together 3 parts olive oil, 1 part vinegar, salt, pepper, and mustard to make the dressing.
  4. 4 Combine the vegetables, apple, and anchovies. Pour the dressing over and toss gently.
  5. 5 Pile the salad onto a plate and surround with cress before serving.
