  • shredded lettuce
  • 5 oz Neufchâtel cheese
  • mayonnaise
  • paprika
  • black pepper

Method

  1. 1 Arrange flat nests of shredded lettuce on individual plates.
  2. 2 Cut the Neufchâtel cheese into three pieces. Roll each into a ball and flatten to a 1/4-inch thickness to resemble egg whites.
  3. 3 Place the cheese 'whites' onto the lettuce nests.
  4. 4 Pipe a mound of mayonnaise onto the center of each cheese piece to represent the yolk.
  5. 5 Serve chilled. Garnish with a dash of paprika and black pepper.
