Navarino Salad With Ham And Anchovies
Ingredients
- 1/2 cup olive oil
- 1/2 cup vinegar
- 1 tbsp chopped parsley
- 1 tsp chopped onion
- 1 tsp chopped tarragon
- chopped chives
- cooked peas
- cooked haricot beans
- small cooked onions
- cooked potatoes, cut up
- 2-3 anchovies in oil
- 3-4 ripe tomatoes, sliced
- cooked smoked ham, diced
Method
- 1 Mix chopped parsley, onion, tarragon, and chives with oil and vinegar.
- 2 Combine the dressing with cooked peas, beans, onions, and potatoes in a bowl.
- 3 Gently toss to mix without breaking the vegetables.
- 4 Top with anchovies and sliced tomatoes.
- 5 Add diced smoked ham if desired.
