Mutton Turnip And Potato Stew
Ingredients
- 2 pounds mutton (breast or inferior cut)
- 1 egg-sized lump of butter
- Salt and pepper
- A few onions or shallots
- 1 pound turnips, sliced
- 1 pint water
- 2.5 to 3 pounds potatoes
- Thyme
- Bay leaves
Method
- 1 Melt butter in an earthenware pan over heat until it colors slightly.
- 2 Add cut mutton pieces, salt, pepper, and onions or shallots; brown the meat.
- 3 Add sliced turnips and water; boil until turnips are tender.
- 4 Add potatoes, thyme, and bay leaves; season moderately and cook gently until potatoes are tender.
- 5 Remove meat, mash turnips and potatoes together, place meat on top, and serve.
