Mutton Turnip And Potato Stew

Ingredients

  • 2 pounds mutton (breast or inferior cut)
  • 1 egg-sized lump of butter
  • Salt and pepper
  • A few onions or shallots
  • 1 pound turnips, sliced
  • 1 pint water
  • 2.5 to 3 pounds potatoes
  • Thyme
  • Bay leaves

Method

  1. 1 Melt butter in an earthenware pan over heat until it colors slightly.
  2. 2 Add cut mutton pieces, salt, pepper, and onions or shallots; brown the meat.
  3. 3 Add sliced turnips and water; boil until turnips are tender.
  4. 4 Add potatoes, thyme, and bay leaves; season moderately and cook gently until potatoes are tender.
  5. 5 Remove meat, mash turnips and potatoes together, place meat on top, and serve.
