Ingredients

  • 3 pounds mutton breast, cut into squares
  • Butter for browning
  • 6 onions, chopped fine
  • Flour for dredging
  • 6 cups stock or water
  • Salt and pepper to taste
  • Grated nutmeg
  • 2 carrots, chopped
  • 2 turnips, chopped
  • 1 bunch sweet herbs
  • 1 clove garlic, crushed
  • 1 cup lima beans
  • Parsley for garnish

Method

  1. 1 Brown the mutton squares in butter with chopped onions.
  2. 2 Dredge with flour, then add stock or water. Stir constantly until thickened.
  3. 3 Season with salt, pepper, and nutmeg. Add carrots, turnips, sweet herbs, and garlic.
  4. 4 Cook for 30 minutes, then add lima beans and cook until beans are tender.
  5. 5 Skim the liquid, remove herbs and parsley, and serve.
