Mutton Stew With Lima Beans
Ingredients
- 3 pounds mutton breast, cut into squares
- Butter for browning
- 6 onions, chopped fine
- Flour for dredging
- 6 cups stock or water
- Salt and pepper to taste
- Grated nutmeg
- 2 carrots, chopped
- 2 turnips, chopped
- 1 bunch sweet herbs
- 1 clove garlic, crushed
- 1 cup lima beans
- Parsley for garnish
Method
- 1 Brown the mutton squares in butter with chopped onions.
- 2 Dredge with flour, then add stock or water. Stir constantly until thickened.
- 3 Season with salt, pepper, and nutmeg. Add carrots, turnips, sweet herbs, and garlic.
- 4 Cook for 30 minutes, then add lima beans and cook until beans are tender.
- 5 Skim the liquid, remove herbs and parsley, and serve.
