Mutton, Potato, And Carrot Stew

Ingredients

  • 1 neck of mutton, cut into 2.5 to 3-inch pieces
  • 1 tbsp butter
  • 2-3 onions, chopped
  • Water, as needed
  • Potatoes, parboiled and halved
  • Carrots, sliced
  • Salt and pepper to taste
  • 1 tsp Worcestershire sauce

Method

  1. 1 Brown mutton pieces in butter in a saucepan, stirring frequently to prevent burning.
  2. 2 Add enough water to cover the meat and chopped onions. Cover closely and simmer for 2 hours.
  3. 3 Add more water if necessary, along with parboiled potatoes, carrot slices, salt, and pepper. Cover and cook for 1 hour until potatoes are soft but intact.
  4. 4 Stir in Worcestershire sauce. Ensure the gravy is thick by not adding too much water.
