Mutton Chops With Parsley Sauce

Ingredients

  • Shoulder mutton chops
  • Cold water
  • 1 oz butter
  • 1 tsp flour
  • 1 cup milk
  • Chopped parsley

Method

  1. 1 Place mutton chops in a pot with enough cold water to cover. Simmer for 30 minutes, then bring to a boil.
  2. 2 Remove chops to a hot dish. Reserve the cooking liquid if desired, but set aside for the sauce.
  3. 3 Melt 1 oz butter in a saucepan. Whisk in 1 tsp flour to make a roux.
  4. 4 Gradually whisk in 1 cup milk. Cook until thickened, then stir in chopped parsley.
  5. 5 Pour the hot parsley sauce over the chops and serve immediately.
