Mutton Chops With Parsley Sauce
Ingredients
- Shoulder mutton chops
- Cold water
- 1 oz butter
- 1 tsp flour
- 1 cup milk
- Chopped parsley
Method
- 1 Place mutton chops in a pot with enough cold water to cover. Simmer for 30 minutes, then bring to a boil.
- 2 Remove chops to a hot dish. Reserve the cooking liquid if desired, but set aside for the sauce.
- 3 Melt 1 oz butter in a saucepan. Whisk in 1 tsp flour to make a roux.
- 4 Gradually whisk in 1 cup milk. Cook until thickened, then stir in chopped parsley.
- 5 Pour the hot parsley sauce over the chops and serve immediately.
