Mutton Barley Vegetable Soup

Ingredients

  • 1 1/2 cups barley
  • 3 quarts water
  • few onions, chopped
  • 6 carrots, peeled and diced
  • 6 turnips, diced
  • 4-5 lbs rack or neck of mutton
  • few slices lean ham
  • salt and pepper to taste
  • tomatoes (optional)

Method

  1. 1 Combine barley, water, onions, carrots, and turnips in a large pot. Bring to a boil, then reduce heat and simmer gently for 2 hours.
  2. 2 Add the mutton, ham slices, salt, and pepper to the pot. Continue to boil slowly for another 2 hours until the meat is tender.
  3. 3 Serve the soup hot. Add tomatoes if desired for extra flavor.
