Mutton Barley Vegetable Soup
Ingredients
- 1 1/2 cups barley
- 3 quarts water
- few onions, chopped
- 6 carrots, peeled and diced
- 6 turnips, diced
- 4-5 lbs rack or neck of mutton
- few slices lean ham
- salt and pepper to taste
- tomatoes (optional)
Method
- 1 Combine barley, water, onions, carrots, and turnips in a large pot. Bring to a boil, then reduce heat and simmer gently for 2 hours.
- 2 Add the mutton, ham slices, salt, and pepper to the pot. Continue to boil slowly for another 2 hours until the meat is tender.
- 3 Serve the soup hot. Add tomatoes if desired for extra flavor.
